Specialty of the House, Part IX:
Special Occasions
We have a number of special occasions at Carbones. Some, like our chef-side dining,
are ongoing, some take place once or twice a year.
Heres a calendar. Call us for information if you’re interested in any or all of them.
Chef-Side Dining. Every Thursday and Friday, head chef Paul Rafala or owner Vincent Carbone will
come up to your table and tell you about that nights specials. If you order one, theyll
come to your table and prepare it for you. (Of course, salads and some desserts are
prepared tableside all the time.)
Wine Dinners. An opportunity to go with the flow, in a manner of speaking — fine wines
(ours or yours) for each course. Twice a year.
Wine Bins. You can keep your favorite fine wines in one of our bins. Its a very convenient
arrangement. Whats more, you can even buy your wine through the restaurant and save money.
Cigar Parties. Sinful, but so much fun. Once a year. Outdoors, under the stars.
Roman Dinners. This is an Italian style sampler. Our chef prepares a four-to-six-course
meal — taking dishes from our menu and preparing them in smaller portions. The chef will
talk with you and your guests about what they want him to make.
Valentines Day. Why not spend the most romantic day of the year at the most romantic
restaurant in town? But please, make your reservations far in advance. Love lasts forever,
but reservations go quickly.
New Years Eve. Make a resolution to bring in the new year in style. Again, make your
reservations far in advance.
Theme parties. From Mardi Gras celebrations to Parrot Head parties, Carbones is where the fun is.
