Vinnie Carbone | Chef Owner

Vinnie (the 3rd generation of family ownership) continues Carbone’s long tradition of excellence in food and service in his three restaurants. He has also established himself as a celebrated chef with national recognition from the prestigious James Beard Society. The selection of Carbone’s Ristorante as Best Italian by Connecticut Magazine, Hartford Magazine and other food publications reflect Vinnie’s culinary skills and passion for cooking.


In addition, he maintains a very strong commitment to the community. Serata Di Cibo a signature event with proceeds benefiting the Connecticut Children’s Medical Center is in its second year of sponsorship by Carbone’s most recently being held at Carbone’s Kitchen. The Petit Foundation, Liver Foundation, and Hartford Public Library are among the other worthy non-profit organization to benefit from Carbone’s support.

Stefano Guarnieri | Head Chef

Stefano was born and raised in Sicily, in the city of Catania. When he was 13 he began attending a five year vocational school specializing in the culinary arts. During his junior and senior summer breaks he had an internship in the kitchen of the world renowned luxury hotel Villa D’Este on Lake Como, Italy. This experience ignited his passion for the field. After graduation, he enlisted in the Italian army. Once he completed his one year contract as a tank operator, he began traveling the world, working in various restaurants and hotels in Spain, Switzerland and the Canary Islands off the coast of northern Africa. At 26, he made a life changing decision and moved to England, enrolled in croupier school to become a casino dealer and self-taught himself English. This new venture gave him the opportunity to eventually become the casino assistant manager for the Mediterranean cruise line company MSC on six of their luxury cruise liners traveling to the North Pole, South Africa, Northern Europe, the Mediterranean and South America. His final contract traveled the Caribbean waters. This is where by fate he met the love of his life, a girl from Connecticut. This led Stefano back into the culinary industry here in the states, finding a home here at Carbone’s where he can continue his passion. In 2016 he married his wife Jessica and has two daughters. Stefano enjoys watching Catania Soccer and spending time with his family.

Sandro Zarcone | Sous Chef

Sandro Zarcone grew up in the restaurant business. He came to the United States from Palermo, Sicily when he was 13 years old and has been working in the restaurant industry all of his life. From Terrazzo Italia to Ella’s Pizzeria, a small family run business, he now brings his passion and  creativity for Italian cuisine to Carbone’s Ristorante in Hartford. Buon Cibo, Buona Compagnia. (Good Food, Good Company).
